Operation
The MIWE aeromat DS baking ovens are electrically heated baking ovens with an in
motion-baking atmosphere. The control of the MIWE aeromat DS is carried out by means of
a key pad. 21 keys and 3 indicator panels are available. The actual and nominal
temperature are indicated in the upper line. The baking time is indicated in the middle line,
and as an option, the program number, the steam unit temperature, the nominal
temperature and nominal moisture of the proofer are shown in the lower line.
30 baking programs with 5 baking sections each, and one manual program are available.

Special information
The control panel consists of a robust plastic foil. It can be wiped with a wet cloth. While
cleaning, use commercially available cleaning materials no scouring agents or acid is
allowed!
In order to avoid a breakdown of the electronic control, all cooling air openings must be
kept free and clean by all means. Especially the opening in the upper side of the back wall
must not be covered!
Furthermore, the operating voltage may not be switched off immediately after the last
baking process, as otherwise the internal cooling fans will no longer function and the
control would break down due to heat accumulation. This must be especially taken into
account when a central night start-up unit is installed.
!
A lithium battery is installed on the power circuit of the DS control to supply the
real-time clock with current. If you have to change this battery by yourself, in this
case the disposal of the used battery may be only carried out in available old
battery containers. The battery must be completely discharged or
correspondingly insulated (wrapped in adhesive tape) in order to avoid short
circuits.
In case of nonobservance, battery explosions can occur.

General functions
2.1
Switch on or switch off the convection baking oven MIWE aeromat DS
When the oven is switched off, all indicators are dark (exception: when the night start-up is
activated, the night start-up time is indicated).The red LED of the ON/OFF key 6 lights up.
The oven lighting can be always switched on. After switching on the control key 6 , all
indicators are active. All keys can be now operated. The baking chamber temperature is
adjusted according to the nominal value. The luminous indicator panel 11 ”Heating ON”
shows the switching-on of the heating.

After the control has been switched on, it goes back automatically to the values last set for
the timer and temperature. Light and exhaust fan correspond to the basic setting. However,
if the control is switched off with a selected baking program that was not started, the
settings of that baking program are maintained when the control is switched on once
again.
If the key 11 is kept pressed for one second, the circulator, the baking
chamber and the steam heating are switched OFF. Thus, the baking oven is in
the energy saving mode. If required, the proofer can continue to be operated
as an option,
2.2 Set nominal (=desired) values
The time and temperature values necessary for baking as well as steam quantities can be
entered as follows:
Set the baking time
The baking time can be set by the corresponding keys timer UP 13 and timer DOWN 14 .
The last set value is maintained although the control is switched off. By keeping the key
timer UP 13 or DOWN 14 pressed, the baking time goes up or down in 1-minute steps. By
pressing the key for a short time only, the baking time can be set in 5-second steps.
The maximum adjustable baking time is 2 hours or 2 hours for each baking section.

Nominal temperature adjustment
The nominal temperature for the baking chamber is adjusted by means of the keys
nominal temperature UP 9 or DOWN 10 .
By keeping the key nominal temperature UP or DOWN pressed, the nominal temperature
indicator goes up or down in 10-degree steps.
By pressing the keys for a short time only, the nominal temperature can be set in 1-degree
steps. The maximum adjustable oven temperature is 300°C.
Steam supply
The steam keys 24 , 25 and 26 can be pressed at any time. The steam supply is carried
out according to the adjusted steam quantity (see parameter setting steam keys number
3.1). In order to reach an optimum steaming, the solenoid valve must be supplied with clock
pulses.
After pressing a steam key (without baking program or timer operation), a preprogrammed effect time of 15 seconds will begin.
If the steam device has not reached the necessary temperature yet, no more steam
can be supplied. The LED in the steam key 26 flashes as a warning. The switchedon steam heating is signaled with the luminous decimal point in the indicator of
nominal temperature baking chamber 8 .
Nevertheless, if a steam key 24 or 25 is pressed, the actual temperature of the steam
device is shown in the indicator 16 " Sdn " , and 17 . The activated steam key flashes. This
makes possible the control of the heating up of the steam device and the reaching of
nominal temperature. The flashing will be extinguished after the nominal temperature of
the steam device has been reached. The flashing or the indicator switch-over can be
interrupted by pressing again the flashing steam key.
2.3 Readiness for baking
When all nominal values are set or a baking program is selected, the control will heat up
the baking chamber. When the nominal temperature values are reached and the steam
device is heated up, the gong will sound.
The indication heating ON 11 shows the baking chamber heating, (in case of
versions with four circulating fan speeds, the LED indicates the speeds!) and
the decimal point of the nominal temperature shows the switched-on steam
heating. The flashing LED in the steam key 26 signals the lack of readiness of
the steam device.

2.4 Baking with timer
After the nominal temperature values and the baking time have been set, and the nominal
values (gong signal) have been reached, the baking process can be started by pressing the
START/STOP key.
The timer is started by pressing the key START/STOP 15 on the operating panel. The steam
can be supplied once or several times, or the steaming can be switched off again by
pressing the key.
When the set baking time is finished, the gong signal sounds and the letters " EndE " flash in
the timer indicator 12 . By acknowledging with the START/STOP key 15 of the timer or at the
end of the set signal time, the timer is set back again to the original baking time and the
gong signal comes to an end.
If after the start of timer, the steam is supplied for the first time, an effect time of 90 seconds
(adjustment service code 0847) will begin after the steam supply time has finished. An
effect time of 15 seconds is pre-programmed after every further steam supply.
2.5 Baking with baking program 1 to 30
The whole 30 baking programs with five baking sections each can be entered, stored and
started by means of the baking program keys 21 , 22 , 23 and the lowest arrow keys.
Actually, a baking program can consist of one or two sections only.
The three most frequently used baking programs are entered on the memory locations 1, 2
and 3 and can be selected directly by the necessary baking program keys 21 , 22 and 23 .
The programs
4 to 30 are selected by the lowest arrow keys and the program number is likewise shown
in the lower indicator.

If a steam quantity is entered in the first section, the first baking section is without
a circulation fan and heating during the steam effect phase. If the entered time in
section 1 is shorter than the steam supply, it will be automatically interrupted.
If a steam supply is programmed again in another baking program or carried out
manually, a pre-programmed effect time of 15 seconds will begin after the steam
has been supplied.

Baking with program 1 to 30
The required baking program is called in by means of the baking program keys 21 , 22 ,
23 or by the lowest arrow keys. The red LED in the corresponding key lights up and the
program number is shown in the lowest indicator. The programmed values appear in the
upper indicators. The total time of the baking section is shown in the baking time indicator
12 . By pressing several times the function key F1 2 , the baking sections are indicated one
by one (first LED of F1 key = first baking section etc.). After approximately 5 seconds, the
indicator jumps back automatically to the summation indicator in the baking time indicator.
The call-in of another baking program or the switching off of the baking programs is only
possible by pressing again another or the same baking program key when the timer is out
of operation. The baking program can be started any time by means of the START/STOP key
15 .

2.6 Input of baking programs
By pressing the program key Pr 1 , you get into the programming mode (LED flashes). The
selection of the entered baking program is carried out by means of one of the baking
program keys 21 , 22 , 23 and by the lowest arrow keys. After selection of the entered
baking program, the first baking section is selected by means of function key " F1 " and
indicated with the corresponding LED.
All values for the first baking section are entered as above mentioned.
If only one baking section is to be entered , the input is brought to an end by the
programming key Pr 1 .
Otherwise the second, third, fourth and finally the fifth baking section is selected and
correspondingly entered by means of the function key F1 2 .
The steam keys 24 , 25 and 26 are not used for program input. The steam quantity is
adjusted in 20 ml-steps ( & gt; 1 liter in 0.1 liter-steps) by means of lower keys 18 and 19 .
Generally, the exhaust fan is switched on with the highest speed in the program
operation, but can be manually adjusted at any time.

Baking with thaw phase
With each of the 30 programs, the first section can be programmed as a thaw phase (for
thawing frozen dough pieces).
The input of the thaw phase and of further sections is carried out as mentioned above,
however, before the input of the thaw phase, the key 20 with the burner symbol must be
pressed! Afterwards, the letters F-S for Frostlings phase appear in the indicator 16 (below
left). The input of all values in this section refers to this thaw phase.

2.7 After-baking
The after-baking function is a very important function of the control system. With this afterbaking function, the baking process is extended at will, without a new adjustment of the
baking parameters. This is especially important for baking with program, as in case of a
restart, it would of course begin in the first baking section with steaming and other
parameters.
The operation is most simple: The desired after-baking time is simply set by the arrow keys
of the timer
at the end of the baking program but during the end of baking message (letters ”EndE”
and gong signal). Principally, both arrow keys can be operated, even a time reduction is
possible! The timer is automatically started by the time setting.
The after-baking function can be activated only during the end of baking
message! The end of baking message or the signaling time must be set longer,
(service code 0120) if required.

3.1
Setting of parameters
The values of the steam keys

can be simply changed.
No parameter adjustment can be carried out during the baking time process.
Adjustment of the steam quantity
The steam quantity is indicated through the quantity of water, which is transformed into
steam in the steam device. The steam quantity is indicated in the panel 17 . Example: 1.3
liters are indicated by 1.3.
In order to program the steam quantity, you should proceed as follows:
Select program key Pr 1 and press key steam quantity 24 , 25 or 26 . The quantity
adjusted last is shown in the indicator 17 . The steam quantity in liters in 20 ml-steps ( & gt; 1 liter
in 0.1 liter-steps) is entered by means of the keys UP 18 or DOWN 19 . Program further
steam key or press the programming key Pr 1 immediately once more in order to store
the steam quantity.
The steam key 26 is pre-programmed at our works with the steam quantity " 000 " . And so it
is fixed as manual or continuous steam key. By keeping the key pressed, the solenoid valve
is supplied with clock pulses.
If in this case a steam quantity is adjusted, it becomes a fixed steam quantity key as the
keys 24 or 25 .

3.2 Lighting
The oven lighting (key
5
) can be operated when the control is switched on and off.
Depending on the configuration, the lighting is switched on and off
automatically with the control (see service code 0100).
3.3 Steam slide valve
The steam slide valve (key 3 ) can be operated any time the control is switched on. The flap
is open when the LED of the key flashes in red.
The input status has priority in the baking program, but can be modified by
pressing again the steam slide valve key.
3.4 Exhaust fan
In the standard version, the exhaust fan (steam hood fan) can only be switched ON or OFF.
The
ON-OFF switching can also be pre-programmed in the individual baking programs.
As an option, a gradual adjustment is possible if adequate fan motors are provided.
If the switching on is program-controlled, the exhaust fan is generally activated in position
three. The speed can be manually changed at any time.
By pressing the key for 2 seconds, the exhaust fan (key 4 ) can be any time switched ON or
OFF when the control is in the on or off status.
The speed can be adjusted by pressing the key shortly for several times (slow - average fast). After switching on the control, the exhaust fan is started with the speed adjusted last.
This is, however, not the case with the lowest speed which is automatically increased to the
average speed in order to guarantee a safe starting performance of the fan.
The programmed status has priority in the baking program. If the exhaust fan is
switched ON/OFF program-controlled, it generally runs at highest speed.

3.5 Program transfer in case of two-circuit models
In order to facilitate the input of the baking programs in case of two-circuit models, it is
possible to transfer individual or all baking programs from the master control (left operating
element) to the slave
(right operating element).
First, select the baking program to be transferred on the left operating element.
Afterwards press simultaneously the lighting key ( 5 ) and the function key F1 ( 2 ). For
checking, the right operating element shows the program number after the baking
program transfer process.
The transfer of all baking programs is activated by pressing simultaneously the program
keys 1[21] and 3[23] and the function key F1 [2]. For checking, the operating element on the
right side shows the programs transfer by counting the program numbers from 1 to 30.
The MIWE memobox transfers generally into both controls and reads out from the master.
3.6 Switching-off the heating of the steam device
The heating of the steam device can be switched off. In the programming mode, the
heating can be switched off or on by one of the steam keys 24 , 25 or 26 .

3.7 Manual steaming/Presteaming
Manual steaming of the baking chamber can be carried out by pressing the steam key 26
(provided that the key 26 is configured for manual steaming). The water continues to flow
as long as the steam key is kept pressed. One of the other fixed steam keys 24 or 25 can
be likewise pressed at any time.
Steam can be supplied before as well as during the baking process. The
solenoid valve is operated by pulses in order to reach an optimum steam
supply. Even if you keep the key pressed, the water will flow in impulses into
the steam device. The operation is carried out with a pre-programmed effect
time of 15 seconds unless the timer is started. In this case, the unit is operated
with a set steam effect time of 90 seconds (service code 0847). The whole first
baking section changes into an effect phase in the program operation.
3.8 Real-time clock setting
The clock can be set in activated status only (see point A2). Enter the actual day and the
time into control when setting the real-time clock (important for the night start-up).

3.9 Setting of night start-up times
(Except for MIWE aeromat types with gas heating)
The function night start-up enables automatic preheating at a starting time set in advance
to the last adjusted baking temperature or to the selected baking program. At the start of
the daily work, the oven has an optimum temperature and the baking can start
immediately.
The night start-up times can be pre-programmed once. One night start-up time

day or several days, the time must be set at 00:00 hrs. This way, the night start-up
is inactive.
If no key is activated for 2 hours (adjustable by the Service code ”0015”) after the night startup, the program control will switch off the baking oven, and the night start-up for the next
day will be automatically activated.

3.10 External night start-up
The program control is also able to switch on simultaneously an external and operative
branch set

3.11 Activating night start-up
The control is switched off by the ON/OFF-key 6 . The night start-up is activated by the
START/STOP-key 15 . The indicators show the weekday and the time of the night
start-up.
After switching on the control by means of the night start-up function, all the last set values
of manual operation or of first baking section are used when the baking program is
selected. Before switching off the control, it must be set to the way of baking that is to be
used after the begin of the night start-up.
The double point flashes every second in the night start-up time indicator.
The start-up times of single weekdays can be checked by the upper arrow keys 9 and 10 .
After 5 seconds, the indicator switches over automatically to the next following start-up
time. If the following day (or several days) are to be skipped, select the desired start day
and press the START/STOP key 15 within 5 seconds. The double point which flashes again,
confirms the modification.
This operation has to be repeated if the weekly program is checked again by the arrow
keys 9 and 10 ,
The correct setting of the real-time clock and weekdays is necessary for a
perfect night start-up!

4.
Control of the underframed proofer (optional)
4.1
Switching on and off the underframed proofer
Generally, the proofer is automatically turned on when the control is switched on. The
middle LED lights up in the ON-OFF switch 20 of the proofer.
By pressing this switch for 2 seconds, the proofer can be switched ON or OFF at will.
The LED’s flashing in the key 20 indicates the proofer nominal values of temperature and
humidity, which have not been reached yet.
If the proofer only is to be used, the baking oven or its heating and the
circulating fan can be switched off by pressing the key 11 .
Generally, the proofer cannot be automatically switched ON or OFF with the
baking oven if the basic setting of the control is changed. As already mentioned,
the proofer is generally switched ON or OFF by the key 20 . This is also
applicable for the night start-up.
4.2 Setting of nominal values for temperature and humidity
Press the key 20 shortly in order to indicate and adjust the nominal temperature and the
nominal humidity. The left LED in this key lights up and the nominal temperature is shown in
the indicator 16 . The nominal temperature can be now changed by the arrow keys 18 or
19 .
Switch-over to the input mode of the nominal humidity by pressing again the key 20 (the
right LED of key 20 lights up).
After about 10 seconds, the indicator is switched off and the central LED of the key 20 lights
up again. The proofer adjustment is carried out in the background. The lower indicators are
available for other indications. As mentioned above, the indicator can be reactivated at any
time.
The switched-on adjustment of temperature and humidity is indicated by a luminous
decimal point in the respective indicator panel for temperature and humidity.

5.1
Switching on or off the gastro function
The gastro function has to be activated by a service code.
After activation, the gastro function is switched on by keeping the key [24] pressed for 4
seconds.

5.2 Manual operation with the gastro function, time-controlled
After entry of baking chamber temperature [arrow keys 9 + 10] and time [arrow keys 13 +
14], the baking oven is heated to the desired temperature. The gong indicates that the
nominal temperature of the baking chamber has been reached.
After charging the baking chamber, the timer is activated, with the doors closed, by the
START/STOP key [15] and the steam cooking process can begin. When the steam cooking
time is finished, the gong sounds and the letters „EndE“ are displayed in the time indicator.
Due to the integrated steam unit in the baking chamber, there is a minimum
temperature of approx. 100°C.
5.3 Manual operation and core temperature probe with gastro function
The end of steam cooking according to the correspondingly reached core temperature can
be indicated by connecting a core temperature probe (option).
The heating is adjusted by entering the chamber temperature [arrow keys 9 + 10]. The
baking oven is heated to the desired temperature. The gong indicates that the chamber
nominal temperature has been reached .
The desired core temperature is adjusted in the lower temperature indicator [17] by the keys
[18 + 19].
After charging the baking chamber, the doors are closed and the steam cooking process is
activated by the START/STOP key [15]. The time indicator starts by counting upward for a
better overview. When the core temperature is reached, the gong sounds and the total time
of steam cooking is displayed in the time indicator.
Due to the integrated steam unit in the baking chamber, there is a minimum
temperature of approx. 100°C.

5.4 Manual operation with the gastro function
The program input is carried out in the same way as described in chapter 2.6. The gastro
function has to be now selected in the fourth step. The input of the humidification level is
carried out instead of the input of the steam quantity.

Automatic SWITCHING-OFF OF CONTROL
A failure must be acknowledged by the START/STOP key 15 . Afterwards, the control keeps
on working automatically. If the fault is not eliminated, the error message will be indicated
again after the switching-on of the control system. If the failure continues to persist, the
signaling can be ended by switching off the control.

6.2 Fault temperature probe
Resistance temperature probes Pt 1000 are used as temperature probes and are checked
for short circuit and line interruption.
Fault clearance: A service engineering specialist must check the function of the
temperature probe Pt 1000 by means of a multi-meter (20°C ambient temperature in case
of Pt 1000 = 1077,93Ω; 3,9Ω = 1°C). Furthermore, it is possible that the connection is not
correctly plugged or the plug has no contact.
6.3 Fault ambient temperature control
Cause of malfunction: The ambient temperature of the control is continually checked, even
in the off status of control.
The message 52 is an early warning. This means if the temperature keeps on rising in the
switchbox, the control will switch off the heating in order to avoid a further temperature rise.
The switching off is carried out immediately after the message 99.
After the cooling-off, the control is ready for work again.
Fault clearance: The cooling air openings must be checked for dirt accumulation and
cleaned! Check the functionality of the cooling fan. Check the insulation of the oven.
Generally, do not store or deposit objects on or near the baking oven!

The service mode of the MIWE DS control system facilitates fetching in and monitoring of the
internal parameters. For fetching in data when the control system is switched on, you must
first activate the Pr key and afterwards the key F1. The code is adjusted by means of the
arrow keys near the upper timer, and activated by the START/STOP keys. In order to
facilitate the adjustment of higher numbers, the code jumps onto ”0800” by pressing the
Timer arrow keys simultaneously. In case of some code inquiries, new parameter
adjustments can be carried out manually.
Caution: The service codes may only be selected by skilled persons and by MIWE
maintenance staff! In case of misadjustment by non-authorized persons, the service must
be paid for by the customer!
Annex A1: Service code " 0000 " Basic setting
New adjustments are not possible when this code is fetched in. The control system shows
only the software-version (lower indicator) and the device type number (upper indicator).
After 5 seconds, the control system goes back automatically to the operating condition.

Annex A2: Service code " 0010 " Switching on the night start-up function
The internal real-time clock and the required battery are particularly necessary for the night
start-up function. A good operational battery is necessary for a proper function. All other
parameters and baking programs are stored in an EEPROM (function without battery!!).
The internal clock is switched on before delivery and therefore the night start-up function
can be selected.
If the night start-up function is not used, the internal clock can be switched off by the code
0010.

Annex A3: Service code " 0015 " Reactivate night start-up
After the automatic switch on at the time of the night start-up, the baking oven heats up
according to the adjusted actual temperature before the activation of the night start-up.
If after an adjustable period of time (1 to 5 hours) after the switching on, no control key has
been activated, the control changes automatically into the night start-up for the next day.
The period of time can be set in the nominal temperature indicator. The value ”0” switches
off the automatic reactivating of the night start-up. The value ”2” = 2 hours is preadjusted
before delivery.
Annex A4: Service code " 0020 " Control temperature
The control system has a temperature probe on the power supply with which, if required,
the cooling air motor is switched on even if the control system is in a switch-off status (only
in case of a switched on distribution voltage, that means the LED must shine in the
control key ON/OFF). After the selection of the Code 0020, the current ambient
temperature of the power supply appears in the upper indicator and the up to now highest
temperature is shown in the lower indicator. The highest ambient temperature is generally
stored for later check-ups.
Annex A5: Service code " 0022 " Switch-off temperature cooling fan
When the control is switched on, the cooling fan is generally set into operation. When the
control is switched off, it continues functioning for 10 minutes. When the control is in the off
status, the switched-off temperature of the cooling fan is additionally adjusted in the upper
indicator in order to avoid overheating. Normally this temperature amounts to
approximately 40°C.
!
Only a MIWE skilled maintenance specialist is allowed to carry out such an
adjustment. A misadjustment can lead to a control system failure and
consequently to the expiration of any guarantee claims.
Annex A6: Service code ”0024” Indicating analog input
The actual value of humidity is shown in the upper indicator in order to control the function.
This value can be adapted between 80% and 120% in the lower indicator. The jumper next
to the terminal X7 must not be plugged (open input measuring range from 0 to 1VDC; if it is
plugged, input measuring range from 0 to 10VDC).

Annex A7: Service code ”0025” Proofing chamber temperature predisconnection
In the upper indicator, the display shows by how many degrees the heating is to be
switched off before the proofer temperature is reached in order to avoid an increase of
temperature by steam supply.
If the nominal humidity is reached, no early switching-off of the temperature occurs. The
predisconnection value is set now at 0°C but can be increased up to 30°C by the arrow
keys.
Annex A8: Service code ”0026” Ambient temperature probe
An external temperature probe can be connected to the terminal X3 in order to guarantee
a better checking of the control temperature. In that case, the internal probe must be
switched off by means of this service code. For this purpose, the value in the upper
indicator is to be changed from ”0” to ”1”. Furthermore, the plug-in bridge J1 on the power
supply must be changed from position 2-3 into position 1-2.
Annex A9: Service code ”0050” Switch-over from 50Hz power frequency to 60Hz + °C/°F
After selecting the code 0050, the power frequency of the control can be adapted between
50Hz (upper indicator =50 corresponds to the condition before delivery) and 60Hz for
export units (upper indicator = 60). This adjustment is very important for a perfect
functioning of the baking time! The selection of the temperature unit between °C (0) and
°F (1) is shown in the lower indicator. In case of a misadjustment, the timer does not function
correctly!
Annex A10: Service code " 0100 " Configuration Oven lighting and Exhaust fan
The oven lighting status appears in the upper indicator and after the switching-on of the
control system, the exhaust fan status is shown in the lower indicator.

Annex A11: Service code ”0101” Exhaust fan function change-over
In the upper indicator, The control exhaust fan (steam hood fan) is changed over from the
ON/OFF operation (upper indicator =0) to the three-step adjustment (upper indicator =1).
The gradual operation is only possible with special appropriate fan motors. In case of
nonobservance, the motor will overheat or burn out.
Annex A12: Service code ”0119” 4 speeds
In case of MIWE aeromat T types, the optional four circulating fan speeds can be activated
by entering 1 in the lower indicator.
Annex A13: Service code " 0120 " Signal time transmitter and loudness level end of baking
gong
In principle, the signal transmitting ends up at the latest when the time set is over. It can
also be interrupted earlier by pressing the START/STOP key. The longest time to be set is 10
minutes (this corresponds to an indicating value of 600 seconds). If the value indicator is
adjusted to ”999”, the gong can be only switched off by pressing the START/STOP key.
Therefore, the baker must acknowledge the baking signal in order to stop the signal
transmitter! The gong loudness level is to be adjusted by means of the lower indicator:

Annex A14: Service code " 0121 " Exhaust fan ON when the door is OPEN
This function is activated before delivery. For example, when the door is opened, the
exhaust fan or the steam hood fan is automatically switched ON. When the door is closed
again, the switch-on time or operating time is set in the lower indicator (basic value 10
seconds). The automatic fan adjustment can be generally switched off in the upper
indicator.
Annex A15: Service code " 0130 " Steam device nominal temperature
The controlled nominal temperature of the steam device is adjusted at 220°C in the upper
indicator. The actual temperature is shown in the lower indicator (maximum adjustable
temperature: 250°C).
In case of MIWE aeromat T, the setting range is 190-250°C. In case of MIWE aeromat R, the
setting range is 130-250°C.

Annex A16: Service code " 0540 " reset to standard values
The control is set back to the standard adjustment of all parameters by this code (delivery
condition). The entered baking programs are erased as well.
After selection of the code by means of 0540 and confirmation by the START/STOP key,”0” is
shown in the upper indicator. If the value is changed to ”1” and the code is quit by the
programming key, all values will be reset!
If by plugging a new EPROM a new control software is installed, the control carries out
automatically a RESET and the programs are likewise erased!
Annex A17: Service code " 0725 " Water meter impulse adjustment
This adjustment determines whether the baking oven is operated with or without the water
meter. The baking oven is delivered as a standard with the water meter. After the call-in
of the code, the value 1 must show in the upper indicator (if necessary, it has to be adjusted
by means of the arrow keys). If the baking oven is not equipped with a water meter or the
water meter is defective, the upper indicator has to be adjusted at (0) and so the water
meter is switched off automatically. The needle valve of the baking oven must be adjusted
so that in 10 seconds about 1 liter of water flows into the steam device. The solenoid valve
(rel1 =01) is switched on by the service code 0807 and the quantity of water is measured for
20 seconds. The needle valve continues to be adjusted (corresponding to 20 seconds) until
exactly1 liter of water has flown in.
Independently of this setting, the cycle relation is set by the code 0726.
With the version with the water meter, the pulse number of the water meter is adjusted in
the lower indicator. This pulse number is produced during the pass-through of 0.1 liter
(=100ml) (Standard=100).
Here are two examples:
A water meter delivers 15 pulses per 0.1 liter of water and so the value in the nominal
temperature indicator must be set at 015.
If a water meter delivers 100 pulses per 0.1 liter of water, the value of the nominal
temperature indicator must be set at 100.

If the baking oven is operated without a water meter, the upper indicator is to be

needle valve must correspond to the setting of the opening time of the solenoid valve
(both settings are measured without clocking of the valve!).
The easiest way to adjust the needle valve is to keep on adjusting until the

necessary to measure the time or to take the clocking into account.
Annex A18: Service code " 0726 " cycle relation steam valve
The solenoid valve of the steam device is generally pulsed-driven for optimum steam
generation. The cycle relation from the switch-on to the off-time is set by this code.
Upper indicator: Switch-on time basic setting 70 (corresponds to 1.4 seconds)
Lower indicator: switch-off time basic setting 120 (corresponds to 2.4 seconds)
The setting is based on the internal control cycle of 20 ms. The set value must be multiplied
by 0.02 seconds (the value 50 corresponds to 1 second).

With the dual cycle types, the controls are connected via an internal interface to switch on
the steam hood fan from both controls. Set the slave (the control without the steam hood
fan connection) at 0 in the upper display with the code 0803. The master remains in
adjustment 1.

The digital input is indicated on the lower heating step key by lighting-up of all three
LEDs.Contact open - LEDs OFF; contact closed - LEDs ON.

Switch off the control by the ON/OFF key and switch it on again.
Annex A25: Service code " 0808 " Test program water meter
The operation checkout of the water meter can be carried out by checking the impulse
period through the code ”0808”in the lower indicator. The arrow keys enable the activating
of the solenoid valve in the upper indicator (rEL = 0 corresponds to solenoid valve is
switched off, rEL = 1 corresponds to solenoid valve is switched on).
Annex A26: Service code ”0809” Nominal and actual value indicator proofer
The nominal and actual values for temperature and moisture of the proofer can be
indicated and changed by this code.
Annex A27: Service-Code " 0815 " Program interlocking with numerical code
The input and modification of the baking programs is interlocked as mentioned above by
entering the code 0815.
For this purpose, the ”0” which appears in one of the indicators must be set to ”1” after
activation by code 0815. The programs can be only changed again after a new activation
and setting to ”0”.

Annex A29: Service code " 0832 " Percental temperature adaptation
The indicated actual value of the baking chamber temperature can be changed
during the temperature adjustment within a range of 80 to 120%. After the callin of the code 0832, the percentage value is shown in the upper nominal
temperature indicator, and the actual temperature is shown in the actual
temperature indicator.
The lower indicator refers to an optionally available proofer.
The percentage value can be changed by arrow keys.
If during baking, the product turns out too dark, the percentage value must be
increased.
The other way round, the percentage value must be reduced if the color of the
product is too light.
Example: Nominal temperature 200°C Actual temperature 200°C Correction value 100% If
the correction value is increased to 105%, the actual temperature will indicate 210°C.
Consequently, when the heating unit heats up again, the oven will switch off when the
actual temperature of 200°C is indicated, which corresponds to a real oven temperature of
approximately 190°C.

Annex A30: Service code ”0833” Absolute temperature adaptation in °C
The indicated baking chamber temperature actual value can also be changed by
means of this temperature adjustment. An adjustment within a range of -30°C to
+30°C is also possible. The correcting value is set in the upper indicator.
Contrary to the percentage temperature adjustment, a perfect adjustment can be
achieved by this code. In case of long probe cables, the cable resistance can be for
example compensated (the standard is 0°C, that means no adjustment is required).
The probe of a potentially installed proofer can be also adapted. The correcting
value used for this purpose is set in the lower indicator.
Annex A31: Service code " 0847 " Slide valve OPEN before the end of baking Effect time
for manual baking
After selecting the code, the slide valve-OPEN time before the end of baking is shown in the
upper indicator. The standard setting of 30 seconds can now be changed.
The steaming effect time for manual baking (not in case of baking with program) is set in
the lower indicator. Basic setting 90 seconds.
Annex A32: Service code " 0848 " Control of proofer ON/OFF
The control MIWE aeromat DS can adjust the temperature and humidity of an underframed
proofer.
After selecting the code, the upper indicator is set at 1 if a proofer is available (without
proofer = 0). Basic setting: without proofer (0),

Annex A33: Service code " 0849 " Proofer activation after the switching on of the control
The control MIWE aeromat DS can automatically operate an underframed proofer. With this
code, you can select whether the proofer must be automatically (delivery status) or
separately operated after the switching on of the control. In this case, the upper indicator
must be set at zero (0). This function is also applicable for the night start-up.
Annex A34: Service code " 0850 " Adjustment of baking oven type
With this adjustment, you can select the right baking oven type. A false selection of the
baking oven type leads to false functions. Basic setting is type : 0.
